A consumer-trend report by Technomic says 64% of consumers said eating healthfully is important, compared with 57% in 2010, and that ideas about healthful eating are changing. "We're seeing more consumers gravitate toward health-halo claims -- such as local, natural and organic, as well as whole-wheat and free-range," Technomic's Darren Tristano says. • Mediterranean cuisine is touted for flavor, nutrition
A Mediterranean cuisine class at the Culinary Institute of America introduces students to ingredients such as preserved lemon and pomegranate molasses that are packed with flavor and are healthier than many American ingredients, writes Lynne Gigliotti. "The fact it is so healthy in comparison to the way we generally eat here in the United States is a big draw for me, and I have been attracted to this region in my cooking for many years," writes Gigliotti, an assistant professor at the institute and a former restaurant owner. A survey by research firm The Hartman Group indicates that Americans snack more often than they did in the past, consuming an average of 2.3 snacks per day, most often in the afternoon, evening and late at night. Researchers also found that most snacks were eaten at home, while 12% of respondents reported eating snacks at work and 7% said they had snacks while traveling. • Research links saturated fats with lower sperm concentration
High intake of saturated fats among men was associated with a 38% reduced sperm concentration and 41% lower sperm counts, a study of 701 young Danish men found. • Study: Children still spend too much idle time in front of screens
U.S. researchers looked at 1,218 6- to 11-year-olds included in the 2009-2010 National Health and Nutrition Examination Survey and found that only 38.3% met both daily physical-activity and screen-time recommendations. More than 70% of respondents got the recommended 60 minutes or more of moderate-to-vigorous physical activity daily, while 53.5% had screen time of two or fewer hours per day, according to the study in JAMA Pediatrics. School districts in Massachusetts now have access to a survey intended to gauge students' reactions to new, healthier school meals. School nutrition professionals already are reporting higher participation in school-lunch programs. "With new regulations, new menus with healthy, attractive and affordable options are always expected," says Sheila Parisien, food-service director for Manchester Essex schools.
