Experts examine research on soy foods, cancer risk
Moderate consumption of soy foods does not increase the risk of recurrent breast cancer or of dying from the disease, according to several recent studies. Registered dietitians can clear up misconceptions about soy consumption, and RD Marji McCullough of the American Cancer Society said they should advise clients that soy is a healthy alternative to meat and is safe for women and breast cancer survivors. Saturated fat can be part of balanced diet, expert says
Dietary recommendations call for eating less saturated fat to reduce the risk of heart disease, but Georgetown University Medical Center neuroendocrinologist Thomas Sherman says that whether to consume animal fat or lard should be part of decisions about balancing carbohydrates with fat and protein and balancing types of fats to achieve a healthy overall diet. He says a healthy diet ideally includes a variety of minimally processed foods with a diversity of fats, which can include saturated fat. The Washington Post (4/15)

Study: Time spent on meal prep comes at expense of exercise
Researchers said data on more than 112,000 adults showed that adding 10 minutes to the time it takes to prepare a meal reduces the chances of exercising for 10 additional minutes. Ohio State University researchers said public-health officials should take into account the time people have to spend on healthy behaviors in one day and realize that one healthy behavior can come at the expense of another. Groups find schools are good place to change lifestyle behaviors
Groups such as Common Threads and Kaiser Permanente's Community Health Initiatives for Healthy Eating and Active Living have found it is easier to change the school environment than it is to change the neighborhood environment when implementing programs to encourage healthier behaviors. Linda Novick O'Keefe of Common Threads writes that her organization tries to reach children at school, where it can get their attention, to develop healthy habits that carry over to the home. Minn. school models process for freezing local veggies
School nutrition professionals at one Minnesota school have become a model for preserving and freezing locally grown food. Since 2010, nutrition professionals have worked each summer to harvest vegetables from the school garden, which they later chop, pickle and freeze. The process allows the school to serve locally grown food over the winter, but some point out that the process is difficult and could benefit from a business partnership.
